Honey Almond & Coconut Butter!

Hey everyone! :) As you may know, nut butters are my weakness. Spread it on any surface and I will gladly lick it off. Once, I don’t know how, but I had some peanut butter stuck on my elbow and saw it while I was at school and I decided to just lick it off. Gross, but that’s what you call dedication… right?

So my love of coconut and almonds came together in this butter, which I sweetened with the awesome local blueberry blossom honey I got a farmers’ market this past weekend!

The only thing is that this takes FOREVER to make, so don’t do it in the morning  because the noise will piss everybody off :D

Ingredients:

- 2 cups of almonds

- 1/2 cup of unsweetened coconut

- 1 tablespoon honey

Directions:

Toast the almonds in a 400F oven for a few minutes until they’re aromatic, while you toast the coconut flakes in a dry skillet until golden brown. Throw everything in the food processor and this is what takes FOREVER. After about 5 minutes, everything should be clumpy and stuck to the wall, so you’ll have to continuously scrape down the walls and then process, and repeat! After about 15 minutes, you’ll have a wonderful and yummy spread for your apples, celery, or bread! :)

BAKED AVOCADO FRIES
You’ll need:
1/4 cup flour
1 tsp kosher salt
2 large eggs, beaten
1 1/4 cups panko (Japanese bread crumbs)
2 firm-ripe medium avocados, pitted, peeled, and sliced into 1/2-in. wedges
Grated parmesan for serving (optional) Mary Note: Not optional in my opinion.
Simply:
Preheat oven to 450.
Coat avocado slices in the four, then egg, then panko. Spread on a cooling rack that has been sprayed with non-stick spray, then place on a cookie sheet.  Spray the top of the wedges with olive oil and sprinkle with salt, then bake for about 20 minutes at 450, or until they are golden brown (I turned my oven up to 500 for the last 5 minutes).
